Carl and Tim spent their entire careers in hospitality. Whether it be working in bars, building brands, and navigating the dirty world of wholesale. But the real magic started when Carl was tasked with designing an alcohol-free drinks menu.
Carl approached it differently, focusing not just on flavour, but the elusive umami that makes a drink irresistible.
Instead of replicating traditional cocktails, he worked backward, creating an ingredient that would deliver that same unforgettable impact that traditional alcoholic bases would.
Months of research led to a single, powerful conclusion: creating a world class drink meant going beyond simply mimicking another spirit.

Carl is an industry and media renowned cocktail expert. Before launching CROSSIP he featured regularly on Channel 4’s Sunday Brunch as a drinks expert and has made appearances on ITV’s This Morning.
With 19 years in hospitality, skills in the development of beverages, brands and operations of the bar industry and winner of the prestigious ‘Young British Foodie’ award, Carl has put all of his experience and skills together to generate something special with CROSSIP.
